I think that the warm and cold does not reflect how they are on the inside, it's symbolism. It's a way to distinguish the two. Wolves and Vampires are enemies, it only makes sense for them to be opposites. In eclipse that symbolism is made very, very clear. Think about the title. If anything, the title tells you half of the plot that will happen. Eclipse... the sun and the moon crossing over each other. The sun is hot, the moon cold. Can you guess who the sun and moon are in eclipse... I wonder? I thought it was a very clear title.

Edward- cold, moon, dazzling,vampire, cool calm collected
Jacob- hot, sun, average, werewolf, angry
Bella- average, earth?, somewhere between average and dazzling, human,calm
 
Maybe all these comparisions is why she put fire and ice in the front of the book. Anoehter reason she might have put fire and ice in the beginning is that bella is like the earth and jacob and edward (fire and ice) are fighting over her, and she is being destroyed (earth perishing). Hence the ripped ribbon on the cover. Oh! Back to the fire and ice thing it kinda gave the clue to who she was going to pick i mean fire was destroying her more (jacob making her choose) so she flocked to ice, edward!
