A New Forum: Chocolate

I, for one, cannot read Michael D'Antonio's Herhsey without craving some chocolate. I suspect from the discussion so far I'm not alone!

I thought I'd create this forum to talk chocolate a bit more. We also have some chocolate experts among our readers.

So post some questions, recipes, and thoughts here.

To start, will you share some favorite chocolate recipes? And will you post any questions you have about chocolate?

Chocolate

There is something just so comforting and delicious about chocolate.

For years, whenever my friends and I would get together, we would have a bowl of chocolate dessert in front of us. Bake a chocolate cake in a single layer & let it cool. Poke a few holes in the top and pour some Kahlua over it. In the meantime, make some chocolate mousse and some fresh whipped cream (or use cool whip - works just as well)! Then into the large bow we'd break up half the cake into pieces, cover with 1/2 of the chocolate mousse, and 1/2 of the cream. Repeat and cover the top with shaved chocolate or cocoa powder. Amazing!

Of course, you can beat the taste of just plain milk chocolate: Hershey, Dove, Cardbury Milk; as well as the delectable tastes of Godiva chocolates, Lindt chocolates, Guilyan chocolates, and Terry's Chocolate Orange.

I now need to go and have a piece of chocolate! :smileytongue:

That recipe sounds much like one we have always called "Death by Chocolate!" in our house. I've never tried the Kahlua, but we would use instant pudding (chocolate, or butterscotch, or whatever is your favorite) and cool whip along with crushed candy bars. Layer that with the cake, and you do feel like you are going to die a slow but happy death. :smileyhappy: I get ideas for my ever increasing chocolate urges at http://www.chocolate-candy-mall.com Heaps of chocolate candy recipes - to die for. I gotta go get me some.

This recent resuscitation of the chocolate topic prompts two thoughts:

1. I love this Nigella Lawson baking book, despite the silly title (whenever I bake from it, my wife likes to tell my friends I'm busy being a domestic goddess. But if I threaten not to let her have any of the brownies, all the teasing stops...)

2. The most decadent homemade dessert I know of is to make croissant bread pudding using chocolate croissants. Haven't done it in a while, but I highly, highly recommend it. Unless, you know, you care about cholesterol...

I apologize, this message is not related to the forum.

I am currently pursuing a MLA in Gastronomy from BU after recently completing an AS in Culinary Arts and a BS in Culinary Nutrition. After reading your posts I was happy to discover that there is a doctoral program in food that isn't food science!

I was hoping to pick your brain about the program, so if there is some way to connect on that I would appreiciate doing so.

Hi Bill,

Do you have a recipe handy for the chocolate croissant bread pudding? I've looked on-line and have found many variations using chocolate croissants, plain croissants and chocolate pudding, etc.

I LOVE bread pudding (so long as it doesn't have raisins).

White chocolate bread pudding with caramel sauce. I like to mix apples or dried fruits (yes, raisins).

You probably won't see me again, but the lure of a discussion centered around chocolate must have somehow pulled me in from the other boards...lol.

Chocolate bread pudding w/ carmel sauce...ah, sounds like heaven. If I wasn't so impossibly lazy, I'd attempt to make it. Though of course I'd probably end up poisoning myself. (echoes of former cooking attempts..just kidding:smileywink:)

That sounds totally sinfulll. I must try it!!

I like to mix Betty Crocker Chocolate chunk supreme brownie mix with the ultimate fudge. You mix the supreme according to the box and pour it in the pan then mix the ultimate according to the box but leave out the syrup. Spread the supreme on the ultimate then drizzle the syrup on top and swirl a little with a fork. It is to die for. By the way feel free to add extra chocolate chips or chunks.

you can also mix any fudge or brownie in with devils food cake. Don't layer these mix it all in.

I personnally don't have a chocolate recipe but I recently had some delicious French chocolates I wish I could find in the U.S. I've never had anything like that! My favorites are the pralines and the ganaches: http://www.histoiresucree.com/saint_valentin_chocolate_assortment.html

I knw hershey is the bomb with there milk chocolate and with milk chocolate with the almonds in it also is deeeeeeeeeeee licious. Don't you think so also? I totallay do and not only that kind of chocolate. Now let me tell you about Dark Chocolate i hate it it makes me throw up cuz in my mouth it feels like a dark nasty laxitive i absolutely hate it.Dont you think so? I dnt knw why its out i dnty like it but Hershey Dark Chocolate now that is the bomb that is the only dark chocolate i will eat. At barnes n noble theu have these candy bars i tried 2 one Milk chocolate with the almonds in it and one without almonds and wazzzzzzzzzzzzzzz it the bomb i tell you i kept having good chocolate dreams and it was just amazing  and now now i dnt dream it no more. But it be the bomb digity bomb. COME TRY CHOCOLATE AT BARNES AND NOBLE ITS A GREAT SELLER AND IS THE BEST CHOCOLATE THAT WAS EVER MADE IN STORES(BESIDES HERSHEY)!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

The very best time for chocolate is in the morning.  It adds zing to your day.  Why spend all day dreaming of choc - get it over with.

 

My favourite breakfast is cereal with greek-style yoghurt, frozen blueberries and smashed-up 70% chocolate (I use a local New Zealand brand which is, as Jamisha says, da bomb).  Almost as good is chocolate porridge - my son always asks for it.   These recipes and more on www.chocolateinthemorning.com
