All Hindu recipes will be vegetarian. Here is an online Hindu cookery book. And some Indian vegeratrian recipes.

I can enthusiastically recommend Madhur Jaffrey's Global Vegetarian. It goes beyond Indian cusines (per the title), and all the dishes I've tried are terrific.
