Favorite Simple Meals

I started taking Culinary about two months ago. My instructor has asked us to all make a meal that is simple enough to make,but could be served in a nice restaurant too. I've already decided on Stuffed Bell Peppers, Buttered Corn, andBacon-Wrapped Shrimp and Orange Spinach Salad.Its simple,but my favorite.

So,I know what I want to make,But what I want to know is..What is your favorite simple meal to make?What do you cook when you've only got a small amount of time, but you still want to eat something good?

Porterhouse steak on the grill, corn on the cob and tomatoes out of the garden! Yum!!!

Now that..Is a good meal!Why is that garden grown tomatos taste so much better then store bought?

Because chances are the tomatoes you're buying at the grocery story are being flown from California (or Mexico or South America), picked before ripe and gassed so that they turn red. The closer the vegetables are to you, in season, the better. Support your local farmers!

That's right, BillP. I'm a farmer's daughter (and sister, and cousin)... I wait 10 months to get a good tomato right out of my garden!

Have you read "Animal, Vegetable, Miracle" by Barbara Kingsolver? It was a wonderful book about eating what is grown/raised in your area.

Since I am trying to make my first garden, I have put this (Animal, Vegetable, Miracle / Barbara Kingsolver) on my Book List to read and get for gifts!

 This is fairly simple and one of my absolute favorites:

 

Stores like Whole Foods sell a pre-made cornmeal pizza crust.  Chop up some fresh basil and garlic so that its very fine and well mixed together.  Add a small amount of black truffle oil to it. Then spread this mix on the crust as a base, like your normally would with a pizza sauce.  Then take some slices of a nice tomato and spread them around, and on top of that put a few slices of fresh mozzarella, maybe just 5 or 6 evenly distributed - buffolo mozzarella ideally.  Then it goes in the over for about 15-20 minutes.  That's it!

When we want something simple to fix for supper we make a green bean banquet.   I think hubby found  the recipe on the back of a green bean can.  Not sure of exact recipe but it contains:: a can of green beans, link of klebasa sausage, diced potatoes, chopped onions, and he adds a bit of rosemary, salt, garlic, and pepper.  A quick and good meal.

When it's cold out, definetly potato dumplings.  Chop us some raw potatos and run them through the blender with flour until you get a thick enough batter for dumplings.  Then simple use a spoon to dollop them into a pot of boiling water.  While that's going on finely chope bacon and onion and sautee the mixutre until the bacon is as crispy as you want it.  One the dumplings are done and in a bowl simple pour the bacon/onion over them and mix them up.

 

These are really good as leftovers, fry them in a skillet with a little butter until they are a little brown on all sides.
