My Favorite Dessert

Omélette Sybérienne

6 egg whites
granulated sugar
cake
vanilla ice-cream

Cut the cake in slices and line an oven proof dish with it. (Optional, sprinkle some fruit liquor over the cake). Leave a few slices aside, you will put these on top later. Turn on your oven, and set it at max.

Whip the egg whites with a few tablespoons of sugar until you can turn the bowl upside down. This should only take a few minutes.
Fill the oven dish with vanilla ice-cream, then put slices of cake on top. So the ice-cream is now covered with cake on all sides. Use a spatula to cover it with the whipped egg whites, a nice thick layer. Twirl it a little so that it stands out in nice little peaks. Sprinkle with granulated sugar when you are done.

Put it in the hot oven for a few minutes. Watch it as the top turns golden brown. From perfect golden brown to nasty black will take only a few seconds so you will need to watch it through the oven door.

Now all you need to do is accept the applause gracefully. This is easy to make but it looks very impressive!

PS: note for novices: the bowl in which you whip the egg whites needs to be super clean. Use a slice of lemon to remove any traces of fat or the whites won't stiffen up properly. Best way to separate the eggs, is to use separate cups. Only turn the white into the bowl when you are sure there is not a single bit of yolk inside.

Yum! Thanks for sharing, Caroline. Some readers may know this recipe by it's English-language name, Baked Alaska, the new world version of Siberian Omelette but otherwise the same. You can also flame this by topping with a little rum or brandy and lighting it up. Great for a festive occasion!
