I watched two shows on Food Network this weekend...Nigella and Simply Delicioso. Both shows were Mexican flavors themed and it made me think "What's going on?". Well, cinco de mayo is around the corner and I can't wait.
Ingrid on Simply Delicioso made her quesadilla stacks where she had a fried tortilla topped with creamy (heavy cream and cream cheese mix) chicken then stacked with another fried tortilla which is smothered with a chunky guacamole then stacked with another tortilla topped with the cream mix and Mexican blend cheeses. I made my own version of this with a spicy chipolte tomato chicken. I used some of the sauce from the chicken for dipping. YUMMMMMMY!
Nigella made a margarita ice cream that required nothing but mixing and freezing. I haven't tried it yet but it certainly looked yummy as well!
Any cinco de mayo favorites out there? Anyone planning on inaugurating outdoor entertaining with a cinco de mayo fiesta?
