Because, especially in a children's series, that ending would SUCK.
And the fact that bk 1, chpt 1 is titled "The Boy who Lived." There might be some nice narrative symmetry in having the final chapter of bk 7 be "The Man Who Died," but that would still have basically been evil winning over good and chucked most of the lessons of the series out the window.

Well basically Harry is a horcrux. When Voldemort used the Avada Kadavra spell on Harry he doesnt kill Harry he only killed the horcrux.
