This may, in fact, be one of the hardest questions! Certainly, I'd want to spend my whole life there, once I'd seen it for a day! But let's see .....
-- Gryffindor common room (and all of them, if time alotted, but esp. that one)
-- the Room of Requirement (although I think I'd want to see it several times, each as something different!!)
-- the Great Hall
-- the Quidditch pitch
-- the Whomping Willow, the tunnel, and the Shrieking Shack
-- all of Hogsmeade
-- the library
-- professors McGonagall's, Snape's, Flitwick's, Trelawney's, and the DADA classroom's and offices
-- Dumbledore's office
-- Firenze's classroom
-- Hagrid's hut
-- the mermaid village in the lake
-- the tree by the lake where the marauder's frequented
I think that about covers it. I don't know if you'd be able to do all of that in a day, but ... ah, I wish!

I think you could spend your whole day at Hogwarts just looking at, and talking to, the pictures on the walls.
I'd love to chat with Sir Cadogan, the Fat Lady, the drunk Monks, Violet, and the one (Barnabus the Barmy?) who was trying to teach ballet to the trolls.

Absolutely! Who knows what other treasures were stashed away in there? If the ROR came into being with the creation of the castle, there could have been other founders' artifacts there and all sorts of other magical objects we never got to see.
(mind you, a touch of fiendfyre in my cellar might not be a bad thing!)

First I'd find the last TimeTurner-- it was overlooked when the Time Room was ravaged. Then I'd go to Hogwarts, set it back and see everything there and that has happened over the ages.
Would love to see the founders arguing over which House Table goes where and Dumbledore sitting under the sorting hat.
Oh, and the planting of the Whomping Willow -- that must have been a scene --
"Poppy, bring the dittney QUICK! this seedling is harder to handle than a hungry werewolf!!!"

I would spend the whole day in the Room of Requirement, and have a time turner so I could spend as many hours as I want. ^_^

If I could spend a day at Hogwarts I would probably go see:
- The North Tower
- Hargard's Hut
- The Forbidden Forest
- The Griffondor Common Room
- Room of Requirement
- Dumbaldores Office
- The Dinning Hall
- Potions Room
- Green House
- Defense Against the Dark Arts Room
- Quiditch Field
- The Kitchen to see the House Elves
I would probably try to see the whole school if I could. It sounds so beautiful in the books.

I'd go.....
Down to the Quidditch pitch and learn how to ride a broom
Up to Dumbledore's office and meet the greatest wizrad of all time
The secret passage behind the humpback witch statue and into Hogsmeade
The Great Hall for lnch
Experiment in the room of requirement, use the vanishing cabinet to go to Diagon alley and get a wand
The Gryffindor common room and meet Harry, Ron, and Hermione
Down to Hagrid's hut for tea. Pet Fang
I'd visit the Classrooms and learn some spells, before boarding the Hogwarts express back to London begrudgingly

Feasting in the great hall, then sneaking some butterbeer to the highest tower to get the best view of the forest and lake.

The Great Hall, everytime I read the books, I get hungry. Hagrid's house would be interesting to visit. Going into the forest to see the Centaurs would be fun too. The Quidditch field. The living quarters for each of the houses.
