I vote for DVD Catalyst 4.  It is absolutely easy and the profiles already include the Nook Color and Nook Tablet with several variations for file size and video quality.  I have two other converters but for the Nooks I use DVD Catalyst 4 because it has been optimized for my devices.

I'm a windows user, and hand an NT.  I've been using Any Video Converter.  I've gotten several videos to port over quite nicely, although they aren't full screen.  Another converter I tried, is H.264 Encoder.  It works well, however the size of the video gets to be an issue.  I don't have any microSD cards larger than 2GB at the moment.  AVC is free, although there is a pay version that does other conversion, but when porting from flash to say iphone or other platforms(i have palm pre), it works great.  Again, the videos don't fill the screen, but they remain crisp and fluid.

After DVDFab has removed a Movie from the DVD, I run DVD Shrink to make an ISO file.

Then run HandBrake to convert to M4V. 

Works great for 4.5Gb movies. Voice and vedio always in sinc.

Be sure they are less than 2Gb or Fat32 wont support them.

Haven't needed a splitter yet but might some day.

yes I also agree with using DVD Catalyst 4; i found not only is it very simple to use so I can load some movies onto my wife's color, but their support was excellent in helping me convert some music dvd's i was having trouble with. Combine ease of use with great service and a low cost; this one is a no-brainer.

I have had great luck with the DVD Catalyst tool.  It is not free but only costs $9.95 via download.  Simple enough to use and can convert to many different formats.
